Cheesy Beefy Pasta Sauce Un-Recipe

Somewhere, perhaps deep in a mountain lair or maybe hidden away in an abandoned missile silo, there are scientists who speculate that should Condensed Cream of Mushroom Soup disappear from store shelves tomorrow it will herald the end of civilization as we know it. Oh, I didn’t say they were the sort of scientists you’d want running the Large Hadron Collider or even tinkering underneath the hood of your Ford. I’m sure they exist though simply because no matter how ridiculous a proposition someone makes, you can always find somebody who will support it. Witness Scientology.

Whether you believe that Condensed Cream of Mushroom Soup was the foundation of modern civilization, you have to admit that it’s pretty handy to have around. How else do you explain almost 80,000 recipes using it on Google? Today I have an un-recipe for a yummy pasta sauce taking advantage of that mushroomy miracle in a can.

It’s an un-recipe because I’m a little light on the measurements. The truth is, I wanted pasta with a meat sauce for dinner and I didn’t have any tomato sauce in the cupboard. So I just made this up on the spot with what I had lying about. My suggestion to you is just that… take this un-recipe and any measurements as only a suggestion of what you might want to do. Vanilla Muffin Nirvana Recipe

Vanilla muffins that a Buddhist monk would loveThese muffins are an exercise in simplicity which will help you attain that ineffable state where all desire and suffering shall be extinguished and you break free from the chains of karmic bondage, finally achieving enlightenment and wisdom.

Oh, alright. So it’s probably unrealistic to expect that from any food but these muffins are pretty tasty. And I’ve been making variations on this recipe, on and off, for a few months now trying to get the perfect vanilla muffin. I don’t think I’m there yet, but these will do. They have a delicate flavor that will go well with your morning coffee and they are pretty easy to make to boot. In fact, if you’re organized, you can probably whip up the batter in the time it takes your oven to preheat.

I also like to think these are versatile little quick breads in that the basic recipe serves well as a base for other muffin varieties. Throw in a handful of blueberries, or chocolate chips or perhaps dial back the sugar and throw in some Asiago cheese and suddenly you’ve got a whole other biscuit. So maybe these muffins haven’t reached nirvana, but when they’re this simple and good who cares? Read the rest of this entry »

Rum Scampi

Happy little shrimps -- not just for dinnerJust because you can’t imbibe in the middle of the day doesn’t mean your crustacean friends can’t. It’s a little known fact that shrimp love their rum. It makes them happy little decapods, and if you make this recipe you’ll be happy too. It’s simple enough that you can make it for lunch with no trouble at all, especially if you do the marinade the night before. It might seem a little steppy for a midday meal, but it all goes together very quickly and took me just about a half hour total. The taste, texture and wonderful aroma will beat the pants off a sandwich and chips any day.

I adapted this recipe from several I found around the net, adjusting the ingredients to our tastes. As I made it, the shrimp have a very strong flavor to them and not everybody likes that so feel free to make your own adjustments. And for heaven’s sake, enjoy it with a small shot of rum. Torta Di Ricotta E Cioccolata (Ricotta and Chocolate Cake) -- Insanely deliciousI don’t know who Patty is, or how she could cram such insane levels of yumminess into one recipe, but her Ricotta and Chocolate Cake recipe is so good that we made it twice in as many days. Of course, when a recipe starts with ricotta cheese, sugar, chocolate chips and not one, but two sticks of butter you pretty much know right away that you have a winner.

Catherine made the first instance of this cake for the students she advises in the International Student Organization meeting at Canterbury School. After sampling it for breakfast, and then seeing the way it was devoured by the students we decided we absolutely had to make it again for ourselves. Despite our springform pan deciding to suddenly fall apart just before putting the cake in the oven (don’t worry — all was saved) it was not a decision we regretted. Read the rest of this entry »

1-2-3-4 Rice

This is a wonderful recipe taken from Madhur Jaffrey’s brilliant cookbook. If you like Indian food and you don’t own this cookbook, stop everything and go buy it now! Ms. Jaffrey calls this “simple buttery rice with onion” (p. 149 of my ancient edition), but I have nicknamed it “1-2-3-4 rice” since it helps me remember how much of everything to use (although I have to cheat on the “1″ since there’s one onion and one tsp of salt).

You’re gonna love it!

1-2-3-4 Rice

Ingredients

  • 4 Tbsp unsalted butter
  • 3 cups of water
  • 2 cups of rice
  • 1 medium onion
  • 1 tsp salt

Preparation

  1. Melt the butter in a heavy pot over a medium flame.
  2. When hot, put in the onion. Stir and saute it until it is almost translucent; do not let it brown in the slightest.
  3. Put in the rice and the salt. Stir and saute gently for a minute.
  4. Pour in the water and bring to a boil.
  5. Cover tightly, turn heat to very, very low and let the rice cook for 25 minutes.

Serves 6

Bisquick Brownie-Simulacrum Recipe

Bisquick: Box of a thousand recipes... that all taste the sameOh, Bisquick, is there anything you can’t do? Whether it be your namesake quick biscuits, hangover-easy chocolate chip pancakes, or any one of your myriad of Impossibly Easy™ creations, Bisquick seems to be the baking mix of a thousand recipes. Except everything comes out with the taste and texture of Bisquick. This browine recipe I found on the web is no exception.

Now don’t get me wrong; I love Bisquick. It’s an essential ingredient in any bachelor’s apartment or hurried household’s pantry. In fact, if you don’t have any Bisquick in the house, I recommend you run out right now and buy a 5lb. box. Believe me, it’ll last you forever and assuming you have eggs, water and milk on hand you’ll never be at a loss for a crumbly bread-like side or dessert. Why don’t we do this more often? (Shrimp and Pineapple Curry)

Photo credit pPod's Kitchen (http://ppod.wordpress.com)Recently, Leo and I have had two very good dinners which were easy to assemble (one was especially easy for me since Leo made it by himself!) yet not the usual heat-and-eat fare that we often resort to on week nights. These meals left us asking, “Why don’t we do this more often?” To which I respond, “Cuz we’re stupid.”

Anyway, dear reader, I’m sure that you’re not stupid and you’ll want to make this recipe and Leo’s hearty crockpot fish stew over and over again. We love this shrimp dish (from the Thai: Simple and Delicious Easy-to-Make Recipes book by Lesley Mackley) for its sweet and spicy sauce and because one out of two children at my house will eat it. Hearty Crockpot Fish Stew

Hearty Crockpot Fish Stew — So simple, hearty and delicious you’ll want to make this rustic stew a family meal fixtureThis is a recipe that Catherine and I are wild about. We positively love the rustic, hearty taste of the fish, mushrooms and potatoes coupled with the creaminess of the evaporated milk, and the spicy kick of the chili powder and ground red pepper. Weekday nights are notoriously hurried and since Catherine often has after-school activities she’s usually starving by the time she gets home. So I like to have something quick, simple and filling ready when she walks in the door so we have more time for talking and cuddling. And this recipe certainly fits the bill. That it should be so delicious just makes this recipe all the more perfect.

In fact, now that I think about it, this may have been the very first meal I ever made for Catherine. I don’t think I’ll forget the look of surprise and delight as she walked in the door and the warm, fishy aroma first hit her, or the look of joy that overtook her face on first tasting it. As I said above, Catherine and I both go nuts for this time-saving stew which leads me to wonder why I waited almost a whole year to make it again.

I mean, really, why don’t we make this more often? It’s so simple to make that you can chop up everything the night before, fry up the bacon and onion the next morning and toss it all in the crockpot before you leave for work. By the time you come home, you’ve got a wonderful, tasty and satisfying home-cooked meal that beats the pants off any pizza. And if you knew how much I love pizza, you’d know how strong of a statement that is.

You’ll want to serve your stew with your favorite cheap beer and a nice crusty bread to sop up the soup left at the bottom of your bowl. Read the rest of this entry »

Cream Cheese Frosting

My dad put this frosting atop the “Surprise Carrot Cake” and it was the perfect complement. The original recipe below produces more icing than you’ll probably need unless you really like to spread it on thick (I do, when it comes to frosting, my dad, not so much). Dad also cut way down on the sugar (I have to agree that a pound of powdered sugar is pretty crazy). I’ve italicized his changes in parentheses after each ingredient.

Where Daddy dearest and I really disagree, though, is on the necessity of making frosting from scratch at all.  For my money, Betty Crocker and her friend Poppin’ Fresh do a splendid job for about $2.50 a canister and it beats the hell out of having four cups of confectioner’s sugar flying every which way. But I’m a lazy slacker who’s always looking for the quick ‘n’ easy way and Dad’s a true cook who actually sifts flour and performs other labor-intensive procedures.

In short, homemade’s better, but Betty’s fine in a time-crunch. I certainly enjoyed every bite of the carrot cake and cream cheese frosting and wished I had been there to lick the spoon! Read the rest of this entry »

Surprise Carrot Cake

 Okay, I’m not exactly sure what the surprise in this carrot cake is supposed to be. In my case, I guess I was just surprised that my dad had made a carrot cake… Surprised and very happy, to be sure. He has been going through kind of a cake phase: a flour-less, European-style chocolate cake, a very involved-sounding pound cake (The recipe for which will not be appearing on this girl’s blog. When he got to the second time you had to sift the dry ingredients, I knew it wasn’t for me!), and now this yummy carrot cake taken from the back of the Softasilk Cake Flour box. I’m not sure what’s up with the whole thing, but I’m not going to complain. Keep on bakin’, Daddy-o!

Here’s the low-down on the carrot cake which may or may not be surprising, but certainly is easy to assemble and very tasty to boot. You’ll want to top it with cream cheese frosting. Enjoy. Read the rest of this entry »
